Food trends 2015: Fried chicken sandwiches, food waste, veggie burgers, more

  • The veggie burger of yore is no more. There's Superiority Burger, for one thing. Who knew a tiny counter serving a veggie burger and a few other items would be so widely craved? Even The New York Times loves it. Brooks Headley left the temple to food that is Del Posto to open it, and it's been a smash success. There's also the new (and rapidly expanding) vegan spot By Chloe and V Burger (all veggie burgers!) in Union Square. The East Village darling Wassail added a veggie burger to its brunch menu. Made with 50% ancient grains (farro, buckwheat quinoa, bulgur) and 50% mushrooms, it's given its depth of flavor by the addition of miso, mustard yuzu aioli, paprika pickled onions, multiple cheeses and smoked caramelized onions. We think the veggie burger will only evolve more in 2016!
