This weekend, acclaimed Chef Eric Greenspan’s New School American Cheese is hosting two pop-ups this month that will have every New York City foodie craving something delicious.
On April 1, New School American Cheese is teaming up with Gotham Burger Social Club and Pearl Street Caviar to host a Burgers & Caviar pop-up. The pop-up, which will be held at Pearl Street Caviar (77 Commerce Street in Brooklyn), will include hand-crafted smash burgers with New School American Cheese, plus drink options such as beer, whiskey, champagne, rose, and cocktails.
General admission ticket holders (which are $100 per person) will be allowed in the event at 1 p.m., with VIP ticket holders ($150 each) will have early admission at 12 p.m.This event is only ticketed for 100 people, so be sure to reserve your spot quickly!

Later this month on April 21-23, New School American Cheese is partnering with The Doughnut Project in the West Village to create a pop-up where New Yorkers can vote on which options will be sold. Through the 8it app, voters can pick between the Bacon Egg & Cheese Doughnut sandwich ($12), which has bacon, egg, New School cheese, Franks’s red hot glaze with everything bagel seasoning, or the Grilled Cheese & Tomato Soup Doughnut sandwich ($10), which has New School cheese between a buttered and griddled doughnut with a tomato soup glaze. Preorders will be taken in the app as well.
The pop-up will take place at The Doughnut Project, located at 10 Morton St.
Outside of these events, Chef Greenspan’s New School cheese will also be featured at Yankee Stadium this baseball season with the launch of the 99 Burger. Created in honor of Aaron Judge, the 99 Burger is made up of two four-ounce American Wagyu beef patties, Greenspan’s New School American cheese, caramelized onions, pickles and secret sauce on a brioche bun for $19.99. Only 99 of these burgers will be sold each game.
